Preparation Time: 30 minutes
8 medium carrots
1/2 t ginger
1 T honey
3/4 c water
1 T butter
Salt and pepper to taste
Peel carrots and slice into quarters length-wise; cut quarters to 2-inch pieces. In a small bowl, mix ginger, honey and water. Place carrots in a saute pan, pour in liquid mixture. Cover with lid and simmer on low heat until carrots are slightly tender. Remove lid and add butter. Simmer without lid until liquid is reduced and carrots are tender. Add salt and pepper to taste.
